Twenty Years of Research in Seabass and Seabream Welfare during Slaughter

Abstract: The behavioural responses of fish to a stressful situation must be considered an adverse reaction caused by the perception of pain. Consequently, the handling prior to stunning and the immediacy of loss consciousness following stunning are the aspects to take into account during the slaughtering process. The most common commercial stunning method in seabream and seabass is based on hypothermia, but other methods such as electrical stunning, carbon dioxide narcosis or anaesthetic with clove oil, are discussed i… Show more

“…Slaughtering methods are usually recognized as a crucial step that influences the quality of fish for consumption. 70,71 Several slaughtering methods are practiced in regional fish processing plants (Figure S1). In addition to the methods mentioned above, immersion in ice slurry is practiced in some factories (disregarding fish welfare).…”

“…Today, almost all sea bass and sea bream are slaughtered by live chilling in ice or ice slurry, followed by a gill cut (European Commission, 2017). During live chilling, fish generally remain conscious for between 5 and 40 minutes and display signs of suffering, including vigorous escape attempts (Van De Vis et al, 2003;Simitzis et al, 2013;Zampacavallo et al, 2015;de la Rosa et al, 2021). Brain activity continues even after fish become immobile (Lines and Spence, 2012).…”
