Abstract:La generación de aguas residuales de la industria de nixtamalización del maíz (conocida como nejayote) en México asciende a 14.4 millones de m3/año. Este tipo de aguas residuales se distinguen por tener un pH alcalino >10, alto contenido de materia orgánica (33.2 gDQO/L en promedio) y una relación DBO5/DQO de 0.4, indicando que corresponde a un residuo con alta biodegradabilidad a través de su tratamiento por procesos biológicos anaerobios con valorización energética.
