Fumonisins, mycotoxins primarily produced by Fusarium verticillioides and Fusarium proliferatum, occur predominantly in cereal grains, especially in maize. The European Commission asked EFSA for a scientific opinion on the risk to animal health related to fumonisins and their modified and hidden forms in feed. Fumonisin B 1 (FB 1 ), FB 2 and FB 3 are the most common forms of fumonisins in feedstuffs and thus were included in the assessment. FB 1 , FB 2 and FB 3 have the same mode of action and were considered as having similar toxicological profile and potencies. For fumonisins, the EFSA Panel on Contaminants in the Food Chain (CONTAM) identified no-observed-adverse-effect levels (NOAELs) for cattle, pig, poultry (chicken, ducks and turkeys), horse, and lowest-observed-adverseeffect levels (LOAELs) for fish (extrapolated from carp) and rabbits. No reference points could be identified for sheep, goats, dogs, cats and mink. The dietary exposure was estimated on 18,140 feed samples on FB 1-3 representing most of the feed commodities with potential presence of fumonisins. Samples were collected between 2003 and 2016 from 19 different European countries, but most of them from four Member States. To take into account the possible occurrence of hidden forms, an additional factor of 1.6, derived from the literature, was applied to the occurrence data. Modified forms of fumonisins, for which no data were identified concerning both the occurrence and the toxicity, were not included in the assessment. Based on mean exposure estimates, the risk of adverse health effects of feeds containing FB 1-3 was considered very low for ruminants, low for poultry, horse, rabbits, fish and of potential concern for pigs. Les mycotoxines sont des métabolites secondaires produits par des champignons, qui peuvent être présents sur une large variété de cultures et en particulier les céréales. Leur maitrise est considérée comme un enjeu majeur dans le monde agricole en raison de leurs effets nocifs sur la santé des Hommes et des animaux. Bien que plus de 400 mycotoxines aient été identifiées, seules quelques-unes sont préoccupantes en production avicole. L’Union Européenne applique ou recommande des teneurs maximales pour certaines mycotoxines dans les matières premières et les aliments pour volailles, afin de protéger les animaux et le consommateur humain. L’objectif de cette revue, est de présenter les effets d’expositions aiguës ou réitérées aux mycotoxines, sur la santé et les performances dans les principales espèces avicoles. Cette analyse est notamment réalisée, lorsque cela a été possible, en comparant les effets observés lors d’études récentes aux seuils réglementés/recommandés au niveau européen. Une attention particulière a été portée sur l’importance des facteurs d’espèces et stades de productions, quant à la sensibilité aux différentes toxines. Le dernier paragraphe est consacré à l’analyse des données disponibles en cas de multi-contaminations en termes d’effets additifs, synergiques ou antagonistes.

Fusariotoxins are mycotoxins produced by different species of the genus Fusarium whose occurrence and toxicity vary considerably. Despite the fact avian species are highly exposed to fusariotoxins, the avian species are considered as resistant to their toxic effects, partly because of low absorption and rapid elimination, thereby reducing the risk of persistence of residues in tissues destined for human consumption. This review focuses on the main fusariotoxins deoxynivalenol, T-2 and HT-2 toxins, zearalenone and fumonisin B1 and B2. The key parameters used in the toxicokinetic studies are presented along with the factors responsible for their variations. Then, each toxin is analyzed separately. Results of studies conducted with radiolabelled toxins are compared with the more recent data obtained with HPLC/MS-MS detection. The metabolic pathways of deoxynivalenol, T-2 toxin, and zearalenone are described, with attention paid to the differences among the avian species. Although no metabolite of fumonisins has been reported in avian species, some differences in toxicokinetics have been observed. All the data reviewed suggest that the toxicokinetics of fusariotoxins in avian species differs from those in mammals, and that variations among the avian species themselves should be assessed.
