“…Soaking with an alkaline solution, sprouting or autoclaving rye all reduced its nutritional value. The effect of autoclaving agrees with previous findings (Moran et al, 1969;Misir and Marquardt, 1978a;Antoniou and Marquardt, 1983). Studies with fractions indicated that most of the beneficial effect of water soaking was associated with the flour, although some improvement occurred in the bran also.…”
