The stilbene profile in edible berries

Abstract: Edible berries are becoming increasingly popular to consume in fresh, dried, frozen or processed forms due to their high content and wide diversity of bioactive compounds with considerable health benefits. Among the wide variety of phytochemicals found in berries are stilbenes, which demonstrate a broad range of biological and pharmacological activities. Their content depends on many factors, including the cultivar, ripening stage, climatic conditions, agronomic management, storage conditions and postharvest m… Show more

“…The stilbene profiles of the grapes show important differences between the years (see Table 2). These may be due to multiple factors that trigger modifications in their molecular structure (Moreno et al, 2008;Flamini et al, 2013;Błaszczyk et al, 2019). Considering the results for both vintages together, it was not possible to identify any consistent relations between stilbene profile and grape variety or maturity, which indicates that other factors may have a greater contribution to the determination of stilbene content.…”

“…Stilbenes are reported to be present in grapes, almond, bean, blueberries, bilberries, peanuts, grapevine, cranberries, mulberries, plum, and wine (Arraki et al, ; Błaszczyk, Sady, & Sielicka, ; Chang, Alasalvar, Bolling, & Shahidi, ; Hassan, Saleh, & AbdElgawad, ; Shrikanta, Kumar, & Govindaswamy, ). The recent review of El Khawand, Courtois, Valls, Richard, and Krisa () remarked how stilbenes present a high diversity in their phenolic structures (various chemical substituents and polymerization), which is a determining factor for their absorption and metabolism rates (El Khawand et al, ).…”
