Plant biodiversity is the foundation of our present-day food supply (including functional food and medicine) and offers humankind multiple other benefits in terms of ecosystem functions and resilience to climate change, as well as other perturbations. This Special Issue on ‘Plant Biodiversity and Genetic Resources’ comprises 32 papers covering a wide array of aspects from the definition and identification of hotspots of wild and domesticated plant biodiversity to the specifics of conservation of genetic resources of crop genepools, including breeding and research materials, landraces and crop wild relatives which collectively are the pillars of modern plant breeding, as well as of localized breeding efforts by farmers and farming communities. The integration of genomics and phenomics into germplasm and genebank management enhances the value of crop germplasm conserved ex situ, and is likely to increase its utilization in plant breeding, but presents major challenges for data management and the sharing of this information with potential users. Furthermore, also a better integration of in situ and ex situ conservation efforts will contribute to a more effective conservation and certainly to a more sustainable and efficient utilization. Other aspects such as policy, access and benefit-sharing that directly impact the use of plant biodiversity and genetic resources, as well as balanced nutrition and enhanced resilience of production systems that depend on their increased use, are also being treated. The editorial concludes with six key messages on plant biodiversity, genetic erosion, genetic resources and plant breeding, agricultural diversification, conservation of agrobiodiversity, and the evolving role and importance of genebanks.

Amaranth (Amaranthus spp.) is an underutilized crop increasing in popularity as a grain and as a leafy vegetable. It is rich in protein, minerals, and vitamins, and adapts well to a range of production systems. Currently, the lack of improved cultivars limits the use of the crop. Breeding‐improved cultivars requires access to large collections of amaranth biodiversity stored in genebanks. The task of searching such vast collections for traits of interest can be eased by generating core collections, which display the diversity of large collections in a much smaller germplasm set. The World Vegetable Center amaranth collection contains around 1,000 accessions of 13 species; among them, there are 281 accessions of four species important for use as vegetable amaranth in Africa (A. cruentus, A. hypochondriacus, A. caudatus, and A. dubius). Based on single nucleotide polymorphism (SNP) marker genotype diversity, a core collection (CC) of 76 accessions, cultivars, and selections was assembled. To a large extent, it represents the diversity of the whole collection. The CC was evaluated for yield and nutritional parameters during the cool and warm seasons in Tanzania and Taiwan and a pretest for variation of drought tolerance in the CC has been performed. Cultivar Madiira 2, an improved cultivar developed for vegetable production in Africa, outperformed all other tested cultivars in terms of yield stability, but several CC accessions had higher yield, lower wilting score, and higher nutrient content than Madiira 2. This indicates the core collection can be used for further improvement of amaranth cultivars.
BACKGROUND Nixtamalized flour snacks such as tortilla chips are widely consumed across the world, but they are nutritionally poor and contribute to obesity and other non‐communicable diseases. The production of healthy versions of such snacks, by incorporating vegetables and improving the quality of the flours used in their formulation, could help address these nutritional challenges. This study compared the fortification of baked tortilla chips with vegetable leaf powders (kale and wild amaranth at 0%, 4%, 8%, and 16% w/w) and using two types of nixtamalized flour: traditional (TNF) and with ohmic heating (OHF). RESULTS Overall, the use of OHF increased 1.88 times the fibre in enriched and non‐enriched snacks with respect to TNF, but the latter had 1.85 times more protein. Addition of 16% of vegetable powders increased protein (kale = 1.4‐fold; amaranth = 1.3‐fold) and dietary fibre (kale = 1.52‐fold; amaranth = 1.7‐fold). Amaranth enrichment improved total phenolic content (TPC) and total flavonoid content (TFC) of chips at least 1.2 and 1.63 times, respectively. OHF chips also had higher bound TPC than TNF ones, regardless of vegetable addition. Combinations of OHF with 16% amaranth produced chips 1.74‐fold higher in antioxidant capacity than non‐enriched ones, due to increased content of phenolics such as ferulic acid. CONCLUSION This work showed that tortilla chips made using nixtamalized flour produced with assisted ohmic heating, alone or in combination with wild amaranth leaf powder, could be used in the production of healthy maize snacks to enhance their prospective antioxidant activity and nutritional value. © 2023 Society of Chemical Industry.
