The role of expert judgments in wine quality assessment: the mismatch between chemical, sensorial and extrinsic cues

Abstract: Purpose The complexity in determining the quality of a credence good like wine increases due to the lack of mandatory ingredient labeling. This has generated a significant information asymmetry in the wine market, leading consumers to delegate their purchase decisions to expert rankings and wine guides. This paper explores whether expert assessments reduce the information asymmetry caused by the absence of ingredient labeling in the wine market.Design/methodology/approach By employing analysis of variance (ANO… Show more

“…Wine has been perceived by consumers as a hedonic product with both cognitive and affective components (Parga-Dans et al, 2022). Consumer wine purchase behavior is intricate, involving attributes like price, grape variety and ROO (Ferreira et al, 2022;Giacomarra et al, 2020;Lockshin et al, 2017;Migliore et al, 2020).…”

Specific intrinsic cues, including taste, assist consumers in making a judgment regarding the suitability of the quality of the wine which is associated with a price point (Parga-Dans et al, 2022). Consumers rely on ROO information during consumption occasions when making a judgment about a regional wine brand as it enhances their confidence in their future decision-making capabilities (Lockshin et al, 2017).…”

“…The general objective of the present study was to explore the sensory, oenological and toxicological profiles of a set of natural Spanish white wines compared to their conventionally produced counterparts. Implementation of both instrumental and sensory analyses was aimed at increasing the validity of results, in line with recent calls to reduce the subjective rhetoric that prevails in wine assessment by experts 15 …”

“…Implementation of both instrumental and sensory analyses was aimed at increasing the validity of results, in line with recent calls to reduce the subjective rhetoric that prevails in wine assessment by experts. 15 The first starting hypothesis was that self-defined NWs differ from CWs in their chemical composition regarding both oenological and toxicological parameters [e.g. level of total sulphur dioxide, biogenic amines, ochratoxin A (OTA), ethyl carbamate, certain heavy metals, methanol, chlorides and sulphates].…”
