The Rapid Tentative Recognition of Psychro‐trophic Types Among Enterobacteriaceae Isolated From Foods

Abstract: SUMMARY Enterobacteriaceae which can grow at the temperatures prevailing in refrigerated food stores (‘psychrotrophic’Enterobacteriaceae) can be distinguished from strains which cannot develop below 10° because the latter generally grow quickly on nutrient agar at 43°0±1° whereas the former do not. By this test inadequately refrigerated foods can be differentiated from those kept properly refrigerated.

“…over 37°C), the so-called thermotrophic types, because they found such counts to be invariably low in waters of good sanitary quality Schmidt-Lorenz, 1981: Schmidt-Lorenz andJaeggi, 1983). We have established earlier that a similar approach could be followed to assess and interpret colonization of piped water and some types of food by Gram-negative bacteria (Mossel and Zwart, 1960: Leclerc et al, 1983: Mossel et al, 1983a. The Swiss results and our own prompted a study of the feasibility of using an enumeration of thermotrophs for the monitoring of bottled, still mineral waters, by carrying out a survey on two leading French brands.…”

“…For this purpose all colonies obtained in VRBG plates were streaked onto plates with MacConkey agar incubated at 37°C and single colonies thus obtained examined for the traits of the main genera of Enterobacteriaceae by the procedures described earlier. In addition to assessing their psychrotrophic character, cultures from these colonies were made in brain heart infusion broth (BHI) (Oxoid CM 225) incubated at 37°C and subcultured on VRBG plates incubated at 30 as against 43°C (Mossel and Zwart, 1960).…”
