The mechanism for improving the flesh quality of grass carp (Ctenopharyngodon idella) following the micro-flowing water treatment using a UPLC-QTOF/MS based metabolomics method

Abstract: The micro-flowing water system can improve the flesh quality of freshwater fish using the traditional pond farming method. However, the mechanism of this phenomenon has not yet been explored. This study intends to examine the changes of metabolites in freshwater fish after treatment with the micro-flowing purification system (MFPS). The UPLC-QTOF/MS based metabolomics method was utilized to screen the metabolites and predict the major possible metabolic pathways after MFPS treatment. There were 377 types of me… Show more

“…Grass carp had a slight weight loss due to the deprivation of food during the experiment. A period of food deprivation is usually used for improving the quality and flavor of the fish [18][19][20]. In the study of Murray cod, fish had an organoleptic quality amelioration after 2 and 4 weeks of food deprivation, and had a weight loss of 4.1% and 9.1%, respectively [18].…”

“…The multivariate correlation analysis of metabolomics data in FBT research shows that the metabolomics approach is a powerful tool to elucidate biochemical changes occurring during the manufacturing processes. The HPLC–MS approach has been widely utilized in metabolomics, owing to its high-throughput capacity, powerful separation ability, high resolution, and strong sensitivity [ 16 ]. This approach mainly focuses on the identification of small molecular endogenous metabolites in organisms [ 17 ].…”

“…The enrichment analysis and metabolic pathway analysis showed that the differential metabolic pathways were “purine metabolism” pathway, and dietary arginine levels led to changes in the relative levels of AMP, IMP, hypoxanthine, and xanthine, which are involved in purine metabolism. AMP is a precursor of IMP, and IMP degrades into xanthine and hypoxanthine ( 19 , 20 ). AMP and IMP present an umami taste ( 21 ), and hypoxanthine and xanthine are the sources of bitterness ( 22 ).…”
