The main spoilage-related psychrotrophic bacteria in refrigerated raw milk

Abstract: Refrigerated raw milk may contain psychrotrophic microorganisms that produce thermoresistant exoproteases and lipases, which may compromise the quality of processed fluid milk and dairy products during storage. The aim of this work was to quantify and identify the deteriorating psychrotrophic microbiota in Brazilian refrigerated raw milk using genetic diversity analysis. The mean psychrotrophic count was 1.1 × 10 cfu/mL. Of the total isolates, 47.8 and 29.8% showed deteriorating activity at 35°C within 48 h an… Show more

“…However, a lower number of isolates were also able to produce these enzymes at 7 °C (Table 2), as also observed in other studies involving Pseudomonas sp. isolated from raw goat milk (Scatamburlo et al, 2015, Ribeiro Júnior et al, 2018a. Among the 13 isolates of P. fluorescens, proteolytic and lipolytic activities were detected, respectively, in 11 (84.6%) and 9 (69.2%) isolates, both at 7 °C and 28 °C, which has also been reported by other authors as a characteristic frequently associated with this psychrotrophic species (Baglinière et al, 2012;Martins et al, 2015).…”

“…Samples of raw milk were collected from nine large dairy farms in the Castro region (the central eastern region of Paraná) and nine small farms in the north and northwestern regions of Paraná, totaling 18 milk samples. These properties have already been previously characterized (RIBEIRO JÚNIOR et al, 2015;2018a). The collections were aseptically performed from May 2016 to August 2017, transported under refrigeration and promptly analyzed in the Laboratório de Inspeção de Produtos de Origem Animal (LIPOA), a member of the Instituto Nacional de Ciência e Tecnologia para a Cadeia Produtiva do Leite at the Universidade Estadual Londrina, Paraná state, Brazil.…”

“…Despite this, some dairy regions of Brazil produce milk with excellent microbiological quality, due to motivation by payment programs for dairy quality, and with high investment in technology applied to production, quality, and animal breeding (RIBEIRO JÚNIOR et al, 2015;2018a). The city of Castro, for example, is recognized for its high production and quality of milk, being recently recognized as the 'Brazilian dairy capital' (BRASIL, 2017a).…”
