The influence of tongue strength on oral viscosity discrimination acuity

Abstract: In this article, the relationship between tongue strength and the ability to discriminate small differences in liquid viscosity during oral processing is explored. Given that tongue strength declines with age in healthy adults and is also reduced in individuals with dysphagia, it is interesting to determine whether reduced tongue strength might contribute to difficulties in evaluating liquid viscosity during the oral stage of swallowing. Using an array of mildly to moderately thick xanthan-gum thickened liquid… Show more

“…Although both of the means for the anterior and posterior tongue pressures in the middle-age group were greater than the means for the young-age and old-age group, pairwise comparisons revealed no differences from each other. The value of 40 kPa can be used as a cut-off value to demarcate a weak or strong tongue strength for healthy older adults [6,7].…”

“…To the best of our knowledge, this investigation is the first training study addressing an mHealth tongue-strengthening exercise for older adults. As tongue pressure measures have been determined to be effective indicators of swallowing function [ 7 , 8 ], an increase in tongue pressure may positively influence swallowing function as well. Decreases in swallowing tongue pressure generated during dry and high-viscosity liquid or bolus swallowing is prevalent in older adults [ 7 , 17 ].…”

“…The ability to generate tongue pressure is critical for liquid bolus propulsion in swallowing and is also an effective index for evaluating swallowing function [ 7 , 8 ]. Tongue pressure commonly decreases with aging [ 2 , 4 ], partly due to sarcopenia of the tongue [ 1 , 4 ].…”
