The Influence of Heat Treatment in Liquid Whey at Various pH on Immunoglobulin G and Lactoferrin from Yak and Cows’ Colostrum/Milk

Abstract: Yak milk is gaining popularity yearly, as a source of nutritious, immune, less likely to cause allergies than cows' milk and a means of generating income, though ranked behind bovine milk in China. The main objective of the research was to compare the Immunoglobulin G (IgG) and Lactoferrin (LF) concentrations of liquid whey from Yak and dairy Cows' colostrum or milk. Thereafter, the thermal stability of liquid whey was evaluated by measuring the concentration change in IgG and LF using an ELISA technique, as i… Show more

“…These results largely agree with the study by Shimo et al, who recorded significant aggregation and denaturation of lactoferrin at temperatures above 63 • C, especially when pH was increased as well. Below 63 • C, no significant denaturation occurred (70). Other immunological compounds in colostrum such as cytokines were studied as well.…”

“…Whereas in adults, colostrum promotes healing of the GI tract and protects against gut pathogens (bacteria, viruses, fungi, yeast, mold, etc. ), and leaky gut syndrome ( Shah, 2000 ; Hurley and Theil, 2011 ; Osada et al., 2014 ; Wu Xiaoyun and Xiong Lin, 2015 ). The major bioactive components of bovine colostrum and their functions in children and adults are summarized in Table 1 .…”
