The impact of ozone on health-promoting, microbiological, and colour properties ofRubus ideausraspberries

Abstract: The purpose of the study was to define the impact of ozonisation duration and concentration on selected chemical, physical, and microbiological properties of Rubus ideaus red-fruited raspberries of the Polka variety. Raspberry fruit was exposed to a stream of ozone in concentration of 0.3 and 0.9 mg/L over a period of 60 and 120 min. The scope of the study covered the measurements of titratable acidity, soluble solids concentration, and such health-promoting indicators as content of phenol compounds, flavonoid… Show more

“…Since activity of low doses of ozone does not cause any damages to epidermis, it does not have a negative impact on the quality of plant products. The obtained results are compliant with the research by Skog and Chu (), where analogically no impact of ozonization on the changes of cucumber surface color was reported, and research carried out by Onopiuk, Półtorak, Moczkowska, et al (), where raspberries were subjected to ozonization.…”

“…Gaseous ozone is a promising solution for extension of tomatoes shell life (O 3 ). Ozone, a triatomic allotrope of oxygen, is characterized by a high oxidation potential of 2.07 V compared to chlorine (1.36 V) and oxygen (1.23 V) that conveys bactericidal and viricidal properties (Analia, Loredo, Guerrero, & Alzamora, 2015;Ong & Ali, 2015;Onopiuk, Półtorak, Moczkowska, Szpicer, & Wierzbicka, 2017). The most important and critical parameters during ozonization are: correct choice of ozone concentration and optimization of process time (food products exposure to ozone) (Ong, Ali, Alderson, & Forney, 2014).…”

“…Selma et al (2008) não obtiveram alterações significativas na qualidade sensorial em melão exposto ao ozônio na concentração de 10.000 ppm/30 min. Onopiuk et al (2017) observaram que concentração do ozônio de até 0,9 mg L -1 , por até 120 min, não afetou os atributos sensoriais de framboesa.…”

“…One of the key segments of plant agrotechnics is fertilization as mineral and organic fertilizers affect the chemical, biological and physical properties of soils, shaping its productiveness, richness and fertility. The most common organic fertilizer used in agriculture is manure, which is considered one of the best fertilizers in terms of impact on the soil environment [10]. However, due to the increasing share of cereals in the distribution of crops, and the reduction of stocking density in agricultural holdings, its deficit is more and more often experienced.…”
