The Health Benefiting Mechanisms of Virgin Olive Oil Phenolic Compounds

Abstract: Virgin olive oil (VOO) is credited as being one of the many healthful components associated with the Mediterranean diet. Mediterranean populations experience reduced incidence of chronic inflammatory disease states and VOO is readily consumed as part of an everyday Mediterranean dietary pattern. VOO is rich in phenolic compounds and the health promoting benefits of these phenolics are now established. Recent studies have highlighted the biological properties of VOO phenolic compounds elucidating their anti-inf… Show more

“…Phenolic compounds in VOO were shown to improve endothelial dysfunction and reduce oxidative stress plasma parameters, both playing a key role in the development of atherosclerosis [131,132]. Moreover, VOO phenolic compounds could counteract inflammation, which is an important trigger in the development of atherosclerosis though the expression of adhesion molecules.…”

“…Oleacein (2), monoaldehydic form of oleuropein aglycone (5), and their deuterated derivatives (2-d and 5-d) used as surrogates in UHPLC-QTOF-MS, were supplied by Vado Olivo S.A. (Jaén, Spain). The NMR spectra for the four compounds are shown in Supporting Information Figures S1-S6.…”

“…Nevertheless, it is possible to resolve these limitations by applying a low flow of the drying gas, high voltage of the capillary and sometimes, using post-column addition of a polar solvent [33,34]. In this work, we have focused our attention on the analysis of oleacein (2) and the combination of oleuropein aglycone isomers (5)(6) [35] in olive oil using 2-d and 5-d as deuterated surrogates. It is noteworthy that many interesting biological properties have been attributed to these compounds, such as antioxidative, hypotensive, anti-inflammatory, and anticancer [36,37].…”

“…19 Not all phenolics are present in every EVOO and considerable variation has been noted in the concentration of such phenolic compounds (50 to 1000 mg kg −1 ). 5,20,21 The EVOO phenolic content is determined by several factors such as olive variety (cultivar), growing area, fruit ripening, cultivation techniques, processing and storage conditions. “…The oil produced from this first press is known as EVOO; it is of the highest quality and it also contains the highest levels of beneficial constituents. 5,6 The olive oil chemical composition consists of major components (triacylglycerol) that represent about 98-99% of the total oil weight, mainly oleic acid (MUFA) much higher (55-83%) than that of the…”
