The GenusGluconobacterand Its Applications in Biotechnology

Abstract: Organisms of the genus Gluconobacter have been widely utilized within the biotechnology industry for many decades, due to their unique metabolic characteristics. The metabolic features that render Gluconobacter so useful in biotransformation processes, vitamin synthesis, and, as the biological element in sensor systems, are critically evaluated, and the relevance of recent biochemical genetic studies to current and future industrial Gluconobacter processes is discussed. The impact of recombinant gene technolog… Show more

“…As a matter of fact, this enzyme plays a central role in the pentose phosphate pathway, which runs concomitantly with gluconacetan production (19,38). However, glucose-6-phosphate isomerase activity is higher on fructose than on the other substrates.…”

“…The bacteria are able to grow at a low pH of 3.5 in highly concentrated sugar solutions and on fruit such as apples, pears and grapes as well as in ciders (10,16,52). Gluconobacter species are found and utilized in fermentation processes and production of wine, vinegar, and vitamin C among others (10,36,55). To our knowledge, Gluconobacter asaii has not been previously associated with biocontrol activity.…”

“…Strains of this genus also produce aliphatic, aromatic carboxylic and thiocarboxylic acids that find applications as flavoring ingredients 6 . Furthermore, Gluconobacter enzymes and whole cells are thought to be ideal for use as the biological element in sensor systems for the detection of alcohols, sugars and polyols 7 . Natural habitats of G. oxydans are flowers and fruits 8 .…”
