The Evaluation of Glycative Stress and Anti-glycation Effect

Abstract

論文要旨：糖化(glycation)はアミノ酸やタンパクと還元糖の非酵素的な化学反応で生体内のさまざま なタンパクに起こる。糖化したタンパクはカルボニル化合物を中心とする糖化反応中間体を経て，糖化最終 生成物(advanced glycation end products: AGEs)に至る。糖化ストレス(glycative stress)は還元糖や アルデヒドによる生体へのストレスと，その後の反応を総合的にとらえた概念である。糖化ストレスの評価 には糖化反応の過程で生じるさまざまな物質がマーカーとなる。糖化ストレスマーカーには，血糖，糖化タ ンパク，糖化反応中間体，AGEs がある。抗糖化作用の評価には，タンパクと還元糖を含むリン酸緩衝液中 に試料を添加して反応させた後，生成した AGEs や糖化反応中間体の量を測定する。既に，多くの食品， 化粧品素材に抗糖化作用が見つかっている。我々はこれらの素材を利用することで糖化ストレスによる老化 や疾患を予防できる可能性がある。 髙部 稚子 同志社大学 生命医科学部 糖化ストレス研究センター 〒 610-0394 京田辺市多々羅都谷 1-3 医心館 4F
