Tomato (Lycopersicon esculentum) is one of the most popular and valuable vegetables in the world. The most common products of its industrial processing in the food industry are juice, tomato paste, various sauces, canned or sun-dried fruits and powdered products. Tomato fruits are susceptible to bacterial diseases, and bacterial contamination can be a risk factor for the safety of processed tomato products. Developments in bioinformatics allow researchers to discuss target probiotic strains from an existing large number of probiotic strains for any link in the soil–plant–animal-human chain. Based on the literature and knowledge on the “One Health” concept, this study relates to the suggestion of a new term for probiotics: “One Health probiotics”, beneficial for the unity of people, animals, and the environment. Strains of Lactiplantibacillus plantarum, having an ability to ferment a broad spectrum of plant carbohydrates, probiotic effects in human, and animal health, as well as being found in dairy products, vegetables, sauerkraut, pickles, some cheeses, fermented sausages, fish products, and rhizospheric soil, might be suggested as one of the probable candidates for “One Health” probiotics (also, for “One Health—tomato” probiotics) for the utilization in agriculture, food processing, and healthcare.

Armenia has a rich history of medicine and fermented foods. Fermented milk products are enjoyed both as a gustatory pleasure and a digestive remedy. Matsun is a traditional Armenian fermented milk product with historico-cultural roots in ancient subsistence and medical practices. Unlike commercial yogurt, it is made through serial inoculation and consists of a large microbial diversity honed through centuries of human selection. Also made from matsun is choratan, a long- keeping dried version of matsun that can be reconstituted into a creamy base. Narine is the commercial name of Lactobacillus acidophilus INMIA 9602, a bacterial strain endemic to the microbiome of Armenian newborns that is often reconstituted in milk and used as a medical food. Both choratan and Narine have been used in clinical trials for the management of symptoms related to gut dysbiosis. The review of cell cultures and animal trials revealed matsun as a rich source of probiotics with antimicrobial, antifungal, and radioprotective activity due to the peptides released and protease resistant bacteriocins produced. Clinical studies are needed to confirm the effects of combined strains in the human microbiome and establish dosages. Choratan as an isolated strain from matsun showed some effect on microbiome imbalance, but more studies are needed to confirm the results. Narine is well-studied in several preclinical and small clinical trials and accepted as a medical food. Effect of Lactobacillus acidophilus Fermentation on the Quality of Glutinous Rice Products

The effect of Lactobacillus acidophilus and spontaneous fermentation on the quality characteristics of glutinous rice products are investigated in this study. Optimization of the product quality based on orthogonal experiments on the four fermentation conditions ensure that the product still has good sensory properties when stored during its shelf life at room temperature. The optimal fermentation conditions based on the range analysis are the mass ratio of glutinous rice, corn and rice 8:1:1, L. acidophilus inoculum of 8%, fermentation temperature of 37 °C, and fermentation time of 28 h. Under this condition, rice products’ hardness, viscosity, elasticity, cohesiveness, and taste significantly increase compared to the spontaneously fermented products. The pasting characteristics, water absorption index, thermodynamic properties, short‐range ordered structure, and microstructure of two kinds of fermented rice flours are analyzed. L. acidophilus fermented rice flour is more prone to pasting and ageing, with a higher proportion of short‐chain amylopectin in starch and lower final viscosity and water absorption, with a denser and smoother internal structure. In conclusion, fermentation improves the properties of glutinous rice flour and its products, and L. acidophilus fermentation is more effective than spontaneous fermentation.
