The Effect of Carcass Traits on Economic Values in Hanwoo

Abstract: The objective of this study was to investigate factors related to carcass traits of Hanwoo. In the statistical model developed in this study, slaughterhouse, carcass year, carcass month and sex effects were used as fixed effects and carcass traits (carcass weight, marbling score, loineye muscle area, backfat thickness and meat yield index) as covariations. The grading service data for 285,515 Hanwoo, which were evaluated by Animal Products Grading Service from 2005 to 2007, were used in this study. The partial… Show more

“…Other previous study also showed that each contribution of carcass weight, eye muscle area, backfat thickness, and marbling score was 0.17%, 2.02%, 6.52%, and 97.3% for the auction price, and 33.5%, 1.4%, 4.7%, and 60.2% for the carcass price, respectively [29]. Lee et al [3] reported that the auction price had 0.73 of the highest correlation with the marbling score, and the carcass price had 0.71 and 0.61 of correlation with the carcass weight and the marbling score, respectively. Similarly, marbling accounted for 95.4% of the auction price (R 2 = 0.51), and 52.6% and 44.3% of the total price were attributable to marbling and carcass weight (R 2 = 0.75), respectively [30].…”

“…Carcass grade is not only a standard for production, distribution, and consumption but also for the quality index for consumer selection [1]. The main determinants of carcass grade are carcass yield and meat quality, which considerably influence price [2,3]. Under the recent domestic system, the grade of carcass yield is categorized as A, B, or C, and the yield is determined as a function of carcass weight, backfat thickness, and ribeye area.…”

“…Koo et al (2011) report that backfat thickness, eye muscle area, carcass weight, and marbling score were 11.39±5.40 mm, 81.79±12.21 cm 2 , 362.30±67.15 kg, and 4.38±2.29, respectively. Choi et al (2011) report backfat thickness, eye muscle area, carcass weight, and marbling scores of 10.30±4.62 mm, 81.34±9.55 cm 2 , 361.76±50.10 kg, and 3.96±2.33. Bulls are excluded from this study, and results are therefore less than those of prior studies.…”

“…Compared with this study, the Hanwoo beef unit price was more affected by marbling score in Gyeongsangnam-do than in the whole country. Choi et al (2011) report that partial R-squares were 0.0004, 0.0000, 0.0035, and 0.3463 for backfat thickness, eye muscle area, carcass weight, and marbling score, respectively, and that backfat thickness and eye muscle area did not affect the unit price. That result was different in this study.…”

“…The c.-312A>G SNP was also significantly associated with yield index (YI), where AG animals were favorable for YI (p<0.05). Yield index or meat yield index becomes one of important economic traits in beef cattle (Lee et al, 2011), especially in Hanwoo (Li et al, 2010). Therefore, this SNP may be used as a valuable marker for selecting Hanwoo with high yield index.…”
