Abstract: The yeast Saccharomyces cerevisiae is widely used in food and non-food industries. During industrial fermentation yeast strains are exposed to fluctuations in oxygen concentration, osmot-ic pressure, pH, ethanol concentration, nutrient availability and temperature.
