The absorption of water by gelatin. Part II

Abstract: IN a previous paper [Jordan-Lloyd and Pleass, 1927] the absorption of water by gelatin in a system containing hydrogen, hydroxyl, sodium and chlorine ions was considered. The present paper deals with a system which is similar, except that nitrate ions are present in place of the chlorine ions. The experimental material and method were precisely the same as described in the previous paper. The ash content of the gelatin used in the present experiments varied from 0X02-0X01 %.Three variables influencing water a… Show more

“…gelatin") has an isoelectric point of pH 8. Addition of sodium chloride to gelatin after alkali preparation diminishes swelling in solutions of varying hydrogen ion concentration but the gelatin takes up water in solutions of 1 or 2 molar sodium chloride (Jordan-Lloyd and Pleass (5)). The transformation of collagen to gelatin alters profoundly its physical properties but the characteristic amino acid content of the two appear to be the same (Dakin (6), Bergmann and Stein (7), Schneider (8)).…”
