Temporal Check-All-That-Apply (TCATA): A novel dynamic method for characterizing products

Abstract: a b s t r a c tTemporal Check-All-That-Apply (TCATA) is introduced as a new dynamic method for describing multidimensional sensory properties of products as they evolve over time. TCATA extends the Check-All-That-Apply (CATA) method. Selection and deselection of attributes are tracked continuously over time, permitting assessors to characterize the evolution of sensory changes in products. TCATA is presented using results from trained panel evaluations of yogurt products. Data are also used to illustrate appro… Show more

“…Further investigations are needed to fully explore the option of repeated CATA. Alternatively, temporal CATA has been proposed by Castura, Antúnez, Giménez, and Ares (2015) recently. This approach combines the advantages of continuos recording over time with the possibility to select more than one attribute at a time.…”

“…TCATA curves and difference curves were obtained using the approach described previously (Castura et al, ). Smoothed trajectories were obtained for the samples using principal component analysis (PCA) on the TCATA citation rates, as described elsewhere (Castura et al, ).…”

“…Temporal check‐all‐that‐apply (TCATA) is a recently described rapid sensory method that documents multiple sensory qualities of a sample dynamically over time (Boinbaser, Parente, Castura, & Ares, ; Castura, Antúnez, Giménez, & Ares, ; Oliveira et al, ). TCATA involves continuous checking and unchecking words to track changes in the sample, such that at any given moment, the collection of words that are checked fully describe the sample.…”

“…Temporal check-all-that-apply (TCATA) is a new temporal method, which allows a continuous description of the sensory characteristics of products (Castura, Antúnez, Giménez, & Ares, 2014, submitted for publication). This methodology is basically an extension of CATA questions, which have been extensively applied for sensory characterization with untrained assessors (Meyners & Castura, 2014).…”
