Temperature compensation for determination of moisture and reducing sugar of longan honey by near infrared spectroscopy

Abstract: Near infrared spectra of honeys are affected by sample temperature variation, mainly due to a change in hydrogen bonding of water. The aim of this study was to develop robust and powerful calibration models which can compensate for a variation of sample temperature for the determination of moisture and reducing sugar content in honey using near infrared spectroscopy. Partial least squares regression with the aid of standard normal variate transformation was used to develop three calibration models at constant … Show more

“…The popular GI model involves incorporating in the calibration sample data collected at numerous temperatures, covering the expected range for the application 12,16,25–27 . This typically results in a more complex model due to the increase in the number of latent variables needed to describe these additional variances.…”

“…That is, before PLS calculation the SNV transformation centered each spectrum and then scales it by its own standard deviation, correcting shifts in the y-axis. 13 The PLS regression method was used to develop calibration equations. In PLS, the NIR spectral residuals at each wavelength, obtained after each factor has been calculated, were standardized (dividing by the standard deviations of the residuals at each wavelength) before calculating the next factor.…”

“…19 The NIR technique has been applied in a wide range of fields in the last decades, and several of these applications are currently used for routine analyses, even in online monitoring systems. 13,20,21 It is well discussed in the literature that the water content of honey is the most important parameter for the assessment of ripeness and shelf life. In this sense, honey with a moisture content higher than 18 g/100 g can be spoiled by fermentation.…”

“…Near-infrared spectroscopy is a speedy, simple, and non-destructive method that requires no chemical reagents and allows several analytes to be detected simultaneously [11]. This method has been widely used in the field of honey quality detection, such as with respect to 5-hydroxymethyl furfural [12], variety discrimination [13], honey adulteration [14,15], moisture, and reducing sugar content [16]. Nevertheless, to date, attempts to attain fast and nondestructive prediction of diastase activity have not been successful.…”
