Technological and Safety Attributes of Lactic Acid Bacteria and Yeasts Isolated from Spontaneously Fermented Greek Wheat Sourdoughs

Abstract: The aim of the present study was to assess the technological and safety potential of 207 lactic acid bacteria (LAB) and 195 yeast strains isolated from spontaneously fermented Greek wheat sourdoughs. More accurately, the amylolytic, proteolytic, lipolytic, phytase and amino acid decarboxylase activities, along with the production of exopolysaccharides and antimicrobial compounds by the LAB and yeast isolates, were assessed. A well diffusion assay revealed seven proteolytic LAB and eight yeast strains; hydrolys… Show more

“…The plates were incubated at 37 • C for 24 h. Growth inhibition of the pathogenic bacteria strain mixture used as indicator around the wells was indicative of the presence of antibacterial compounds in the respective cell-free supernatant. The protein nature of the antibacterial compounds was verified by treatment with proteinase (Sigma-Aldrich) and trypsin (Sigma-Aldrich), according to Syrokou et al [24].…”

“…In this study, antilisterial activity was mainly exhibited by the strains of the species L. rhamnosus . Syrokou et al [ 36 ] investigated the antimicrobial activity of 207 LAB isolates and found that 23 strains were active against L. monocytogenes serotype 4b; however these strains belonged to the L. plantarum species, which was not included in our study, and were isolated from sourdough. Limited or no antimicrobial activity against L. monocytogenes was also observed for L. paracasei and L. rhamnosus , isolated from infant fecal samples, and L. acidophilus , isolated from pickled cabbage, examined with the agar-well diffusion method [ 37 ].…”

“…The S. cerevisiae strains employed in the present study exhibited no antilisterial activity, assessed through a well diffusion assay performed according to Syrokou et al [39]. In Table 1, L. monocytogenes population after incubation in BHI broth, at 5 • C and 20 • C, for 24 and 48 h, in mono-or co-culture with the yeast strains, is presented.…”
