Tackling slip effects in the nonlinear flow properties of gellan fluid gels

Abstract: Gellan gum is a biopolymer widely used in the food, pharmaceutical, chemical, and agrochemical fields. Its ability to form a strong gel makes it possible to produce fluid gels.
