Synthetic Starch-Like Particles for Second Harmonic Generation Microscopy

Abstract: A starch granule model system of maltodextrin spherulites was investigated with polarization-resolved second harmonic generation, revealing similar macroscale arrangement, higher intensity, and the presence of highly aligned microdomains, similar to native starch granules.
