The detection of Ochratoxin A (OTA) in the milk of ruminants occurs infrequently and at low levels, but its occurrence may be higher in dairy products such as cheese. The aim of this study was to investigate the presence of OTA in cheeses purchased in the metropolitan city of Bologna (Italy) and the surrounding area. For the analysis, a LC-MS/MS method with a limit of quantification (LOQ) of 1 µg/kg was used. OTA was detected in seven out of 51 samples of grated hard cheese (concentration range 1.3–22.4 µg/kg), while it was not found in the 33 cheeses of other types which were also analysed. These data show a low risk of OTA contamination for almost all types of cheese analysed. To improve the safety of cheese marketed in grated form, more regulations on cheese rind, which is the part most susceptible to OTA-producing moulds, should be implemented or, alternatively, producers should consider not using the rind as row material for grated cheese. It would be interesting to continue these investigations particularly on grated hard cheeses to have more data to update the risk assessment of OTA in cheese, as also suggested by EFSA in its 2020 scientific opinion on OTA.

Süt bileşiminde bulunan proteinler, yağlar, laktoz, vitaminler ve mineral maddeler ile en temel besin kaynaklarından biridir. Özellikle çocukların beslenmesinde, içeriğinde bulunan ve fizyolojik olarak önemli olan enzimler, büyüme hormonları, enzim inhibitörleri ve anti bakteriyel ajanlardan dolayı elzemdir. Fakat süt yararlı ve elzem bileşenleri içerirken aynı zamanda sağlığımızı tehdit edici Okratoksin A (OTA) gibi toksin maddelerini taşıyabilmektedir. Bu çalışmada Isparta ilinden iki farklı mevsimde toplanan çiğ, pastörize ve UHT sütlerde okratoksin A miktarı belirlenmiştir. Bulunan değerlere mevsim etkisi araştırılmıştır. Ağustos 2020 ve Mart 2021 aylarında iki farklı dönemde Isparta pazarlarında satılan 18 çiğ süt, marketlerden toplanan 18 pastörize süt ve 28 UHT süt örneği olmak üzere toplam 64 adet süt örneği incelenmiştir. OTA miktarlarının süt cinsine ve mevsime göre bulunan değerleri; çiğ süt yaz ortalaması 0,06± 0,004 ppb ve kış ortalaması 0,14±0,005 ppb; pastörize süt OTA yaz ortalaması 0,07± 0,002 ppb, kış ortalaması 0,21± 0,011 ppb; UHT süt yaz ve kış ortalamaları sırası ile 0,06± 0,003 ppb ve 0,18± 0,06 ppb bulunmuştur. Tüm süt örneklerinde OTA tespit edilmiştir. Süt türlerine ait OTA miktarlarının kış ortalamaları, yaz ortalamalarına göre anlamlı olarak daha yüksek bulunmuştur (p<0,05).

Organic agriculture is a form of production that is controlled by all stages from production to consumption by using only the drugs allowed by the regulation and certified by control certification companies. Since the use of chemical pesticides in agricultural production, which increases day by day, remains in food as residue, it is dangerous for human health. Particularly because of the Pandemic affecting the world and various health problems, people become conscious of nutrition and prefer a production method that is friendly to human health. Organic Agriculture is an environmentally friendly way of production that gives priority to human health. Despite the favorable climatic conditions and fertile lands in the GAP region, we cannot say that organic agriculture has progressed sufficiently. In this study, the organic cultivation possibility and potential of olive and olive oil production, which is a consequential product for the Southeastern Anatolia Region, will be examined. In the study conducted as a compilation, the experience and observations of the researcher in the region and secondary sources, official reports and statistics were used.
