“…Our study focuses on the autochthonous breed of Jarmelo beef, which, being of sustainable production, is less attractive as a means of production owing to its low economic profitability due to the lower yield of the breed. This situation has been identified as a key obstacle in the production phase since the volumes produced are too small, even at a regional level, and due to the low profitability, few producers are committed to raising animals of this breed and/or intending to increase their number [8].
