Survey of Toxic Heavy Metals and Arsenic in Existing Food Additives (Natural Colors)

Abstract: Pollution levels of toxic heavy metals (Pb, Cd, Hg) and arsenic in existing food additives used as food colors (40 samples of 15 kinds) were investigated. Heavy metals were detected in 8 samples; Pb in 1 sample (2.8 mg/g), Hg in 8 samples (0.1ῌ3.4 mg/g) and arsenic in 2 samples (1.7, 2.6 mg/g). The Pb level in 1 sample of lac color (2.8 mg/g) exceeded the limit of 2 mg/g proposed by JECFA and Hg levels in 3 samples of cacao color (1.2ῌ3.4 mg/g) exceeded the limit of 1 mg/g in the EU specification.

“…It is likely that soil and fertilizers could possibly contribute to trace metals in eggplants, it is therefore necessary to detect whether the levels of the same in the extracted colors are below the permissible limits of the PFA (2004) and EU Scientific Committee on Food (SCF, 2002). Trace metal analyses in the extracts were carried out for Pb, Cd, Hg, Cu and As (Ogimoto, Uematsu, Suzuki, Kabashima, & Nakazato, 2009) by flame atomic absorption spectrophotometer.…”

“…Industrial effluents contain several carcinogenic heavy metals, such as Mercury (Hg), Lead (Pb), Cadmium (Cd), Chromium (Cr), Nickel (Ni) and Thallium (TI) [54]. Different food additives, which were used as food colors, include heavy metals, such as Lead (Pb), Mercury (Hg) and arsenic [55]. Synthetic dyes are azo chemicals in nature, and the oxidative end products have carcinogenic and mutagenic effects, which produce modifications of DNA [52].…”
