Abstract: A gas‐chromatographic investigation of black tea aroma has revealed, besides 19 known components, the presence of 4 new substances: 1‐penten‐3‐ol, trans‐2‐hexen‐1‐ol, α‐terpineol and β‐ionone. The fragmentation pattern of 1‐penten‐3‐ol has been determined by means of high resolution mass spectrography.

“…Suggestions about the mechanism of formation (238-241) and model reactions (242)(243)(244)(245) have been published recently. l-Penten-3-ol (B-25) has been isolated from black tea (176,246), and identified in strawberries (247) and raspberries (248). It seems interesting to correlate the pungent odor of B-25 with that of the fresh fruits and with a certain note present in black tea flavor.…”

“…Aliphatic primary and secondary alcohols and thiols may be analyzed by mass spectrometry as derivatives of o-aminobenzoic acid (1450). Mass spectra of some cyclic alcohols (1226), cyclohexanediol (682), two terpene alcohols (1374), 1-pentene-3-ol isolated from black tea aroma (1104), menthols and carvomenthols (1459) , stereoisomers of 4-caranol (481), and some halogenated alcohols (985) have been reported.…”
