Supplemental linseed oil and antioxidants affect fatty acid composition, oxidation and colour stability of frozen pork

Abstract: The aim of this study was to evaluate the influence of dietary linseed oil and antioxidants on the quality of fresh and frozen pork neck stored at -20 °C for six and 12 months. Polish Landrace x Duroc pigs were fed a standard diet (C), a diet supplemented with 3% linseed oil (L1), or a diet with 3% of linseed oil, 1 mg organic selenium (SE)/kg, and 100 mg vitamin E/kg (L2). Chemical components, fatty acid profile and vitamin E content were determined in the fresh meat. Colour, pH and change in the prof… Show more

“…The gas chromatograph was equipped with two capillary columns of different polarities, i.e., DB-5 and DB-1701, with 10 m × 0.18 mm ID x 0.4 µm film thickness. The analysis was conducted according to the methodology reported by Górska-Horczyczak et al [59]. Calibration was performed on a standard mixture of C6-C16 alkanes (Restek, ANCHEM Plus, Warsaw, Poland).…”

“…For each sample, 10 measurements of crumb color were conducted. Differences between colors were determined with the color difference coefficient (∆ E *) according to the Equation (2): E*goodbreak=L0*L1*2+a0*a1*2+b0*b1*2$$ \Delta {E}^{\ast }=\sqrt{{\left({L}_0^{\ast }-{L}_1^{\ast}\right)}^2+{\left({a}_0^{\ast }-{a}_1^{\ast}\right)}^2+{\left({b}_0^{\ast }-{b}_1^{\ast}\right)}^2} $$ where the subscripts 0 denote the control sample and 1 denote analyzed sample (Górska‐Horczyczak et al, 2020; Zalewska et al, 2018).…”
