“…One hypothesis proposes that mushiness is due to proteolytic activity of the hepato pancreas in the tail muscle (Baranowski, Nip, & Moy, 1984;Lindner, Angel, Weinberg, & Granit, 1989;Lindner et al, 1988;Nip, Zeidan, & Moy, 1981), resulting in the degradation of prawn muscle (Nip et al, 1985;Kimura & Tanaka, 1986). Hepatopancreas extracts contain both peptidase and proteinase activity, and include aminopeptidase, carboxypeptidases A and B, cathepsin C, chymotrypsin, and collagenases (Garcia-Carreno, Hernandez-Cortes, & Haard, 1994).…”

“…Mushiness is characterized by a decrease in muscle integrity and consequent loss of texture (Papadopoulos et al, 1989). It is probably due to collagenolytic activity caused by the disintegration of the hepatopancreas (Lindner et al, 1989). Besides mushiness, the lost of taste and odor have been associated with unsuitable post-harvest handling and preservation (Madrid and Philips, 2000).…”

“…This method is efficient and used worldwide. Studies focusing on the preservation of M. rosenbergii on ice have been performed in countries such as Israel and the USA (Angel et al, 1985;Lindner et al, 1988;Nip and Moy, 1988;Lindner et al, 1989). However, results were not conclusive and in disagreement.…”

“…Aoki et al 9 also reported that serine collagenase was found in hepatopancreas of northern shrimp ( Pandalus eous ). However, Lindner et al 29 reported that cysteine protease was the major enzyme and trypsin‐like enzyme was the minor enzyme in crude extract from hepatopancreas of Macrobrachium rosebergii in the intermoult stage. The result found in the present study was different from that of Lindner et al 29 This was probably due to the differences in types and concentration of protease inhibitors used as well as the assay condition for remaining activity.…”
