Since 2 0 1 5, pinkish grains have been observed in barley ( Hordeum vulgare L. ) products in different areas of Japan. This pinkish appearance is of particular importance because it is associated with a loss of yield and quality of grain products. To date, however, few reports have focused on directly identifying the pink pigment extracted from barley grains. In this study, we aimed to determine the cause of the pinkish color of grains by identifying the pink pigment responsible for this appearance. The pinkish color was initially believed to be attributable to the accumulation of anthocyanin in grains ; however, simple analysis indicated otherwise. In this study, we extracted the causative pigment component from pinkish barley grains found in Japan and identified it as proferrorosamine A.
