Structure of Carthamin

Abstract: The structure 6, 1-(2,6-diketo-3-glucosyl-3,4-dihydroxy-5-p-hydroxycinnamoyl)-cyclohex-4-enylidene-1′-(2′,3′,4′-trihydroxy-3′-glucosyl-5′-p-hydroxycinnamoyl-6′-keto)-cyclohexa-1′,4′-dienylmethane, was assigned for carthamin on the basis of its spectroscopic evidence and hydrolytic behavior.

“…75140). the chemical structure was established in 1979 [16] (Figure 1), and two optical isomers were discovered thereafter [17]. in several publications the formula of carthamin is misrepresented such that the carbohydrate moieties are bound via oxygen bridges, but this is incorrect and does not correspond to mass spectrometric data.…”

“…The following yellow and red pigments produced in Safflower (Carthamus tinctrious L.) petals have been reported: (1) a red pigment: carthamin; 1 (2) a yellow pigment: a carthamin precursor; 2 safflower yellow B; 3 safflomin-A 4a-c and -C; 5 tinctromine 6 and cartormin. 7 All these pigments contain a characteristic C-b-D D-glucopyranosylquinochalcone structure.…”

“…The structure has only recently been revealed because of the compound's instability, 5,6) the structural determination being independently accomplished by us and by J. Onodera et ai. 7,8) We now report a new isolation method and the structural elucidation of precarthamin (1).…”
