Structural Variation and Content of Arabinoxylans in Endosperm and Bran of Durum Wheat (Triticum turgidum L.)

Abstract: Arabinoxylans are one group of dietary fiber components in cereal grains, and specific health benefits have been linked with their molecular fine structures and hence with physicochemical properties such as solubility in aqueous media. To characterize the fiber quality for functional foods, starchy endosperm and bran fractions from 11 durum wheat lines were analyzed for total and water-soluble arabinoxylans, (1,3;1,4)-β-glucan, and bound ferulic acid. The arabinoxylan contents ranged from 11 to 16.4% (w/w) in … Show more

“…As explained above, aleurone is part of the bran. About 25% of AX are found in the starchy endosperm, 25% in aleurone and the remaining 50% are found in the other outer tissues of the grain [35]. Most AX in wheat bran are water-insoluble because of ferulic acid residues establishing crosslinks between AX and adjacent units of lignin [36].…”

“…Arabinoxylans are paramount component of the dietary fiber in cereals and belong to the group of NSP. [76,77] They are major NSP present in endosperm and outer layers of cereals mainly wheat grains constituting cell wall of various types of cereal grains. [54,[78][79][80][81] About 70% of the cell wall's NSP are arabinoxylans.…”

“…Thirty-seven percentage of starchy endosperm arabinoxylans was soluble in water. [76] Arabinoxylans on the basis of structural and conformational-based extraction properties is classified into two categories including water-extractable arabinoxylans (WEAX) and water-unextractable arabinoxylans (WUEAX). [82,83] Total arabinoxylans and water-extractable arabinoxylans content in common wheat are 6.7% and 0.7%, respectively, and the hard wheat varieties possess considerably higher contents than soft wheat cultivars.…”

“…In contrast to cellulose, which is a highly homogeneous polysaccharide composed of -1,4-linked glucose molecules, hemicellulose and pectin are predominantly hetero-polysaccharides in which the recalcitrant backbone is very often decorated with arabinosecontaining side chains (Burton & Fincher, 2014a). Arabinoxylans are ubiquitous in the primary and secondary cell walls of monocots and consist of a backbone of -1,4-linked xylose residues decorated at O2 and/or O3 with l-arabinofuranosyl units (Marcotuli et al, 2016). In contrast, the pectic polysaccharide rhamnogalacturan I consists of a backbone of the repeating disaccharide 4--d-galacturonic acid-1,2--l-rhamnose-1 extensively decorated with a variety of oligosaccharides, of which arabinan is the most abundant (Park et al, 2015).…”
