Structural Determination of Pectins by Spectroscopy Methods

Abstract: Plant polysaccharides include pectins, which are responsible for an important role in plant physiology and are part of the plant cell wall. These compounds are known as gelling and stabilizing agents, which are widely used in the food industry. The scientific literature lacks precise information on the spectroscopy of apple pectin and citrus pectin. Therefore, the aim of this work was to test and compare the physicochemical properties of these compounds. The curves of FT-IR, NMR, ESI-MS, and thermogravimetric … Show more

“…[17] The peak at 2885.56 cm −1 (CH) indicated the presence of pectin after the decellularization process. [18] This assessment confirms that after the decellularization process of kelp, cellulose and pectin maintained their structural integrity.…”

“…Furthermore, the vibration of ─COOH groups of the pectin can be seen in the fingerprint region (830 cm −1 ). [ 45,46 ] Importantly, applying the dopamine‐assisted pectin C coating maintains the increased surface roughness obtained by the delignification process (Figure 2e).…”
