Structural Characterization and Antioxidant Activity of Exopolysaccharide from Soybean Whey Fermented by Lacticaseibacillus plantarum 70810

Abstract: Soybean whey is a high-yield but low-utilization agricultural by-product in China. In this study, soybean whey was used as a substrate of fermentation by Lacticaseibacillus plantarum 70810 strains. An exopolysaccharide (LPEPS-1) was isolated from soybean whey fermentation by L. plantarum 70810 and purified by ion-exchange chromatography. Its preliminary structural characteristics and antioxidant activity were investigated. Results show that LPEPS-1 was composed of mannose, glucose, and galactose with molar rat… Show more

“…Superoxide anions are a precursor of active free radicals and are relatively weak oxidants. They can generate strong reactive oxidative species and cause oxidant damage and various diseases upon interacting with singlet oxygen or hydroxyl radicals [ 47 ]. Fe (III) reduction, reflecting a vital mechanism of polysaccharide antioxidation, could be used as an indicator of electron-donating activity [ 48 ].…”

“…There have been many reports on the use of TWW to produce active substances, but there are few reports on the use of TWW as a fermentation substrate to improve the biomass and carotenoids yield and to explore the composition of TWW before and after fermentation and its effect on laying hens (4,22,23). In this study, the full utilization of the TWW and the large increase of the biomass and carotenoids production of the Rhodotorula glutinis were realized.…”

“…TWW is a by-product in the production process of soybean products, rich in soybean whey protein, polypeptide, oligosaccharides, isoflavones, and other nutrients (1,2). At present, TWW is usually discharged as waste, with loss of protein resources and causing environmental pollution (3,4). The treatment of TWW before discharge is complicated and expensive (5).…”
