“…The ripening of fruits causes gradual loss of vitamin; however, this can be slowed down by refrigeration (Oyetade, 2012). Phillips, Council-Troche, McGinty, Rasor, and Teresa Tarrago-Trani (2016) studied the stability of vitamin C in fruit and vegetable homogenates stored at different temperatures (10, -20 and -55 o C) and observed that the degradation depended on the storage temperatures, as well as the types of fruits and vegetables. Maximum losses were observed as 23% and 94% after 1 and 7 days of storage, respectively.…”
