These lipophilic antioxidants have been reported to inhibit LDL oxidation in humans (25,26). Although the direct mechanism is still unclear, the ameliorative effects of egg on serum MDA-LDL level and LDL oxidizability may be attributable to such antioxidants in eggs.…”
