Spray‐drying of pomegranate juice with prebiotic dietary fibre

Abstract: The prebiotic fibres, resistant dextrin and fructooligosaccharides (FOS), were studied for use as drying-aid agents for the spray-drying of concentrated pomegranate juice, a low-caloric juice containing interesting health-related compounds. Resistant dextrin was the best drying-aid agent as only 0.5 g g CPJ À1 of resistant dextrin was needed to avoid powder stickiness, compared with 1 g g CPJ À1 of maltodextrins and 1.5 g g CPJ À1 of fructooligosaccharides. The best conditions for spray-drying a concentrated p… Show more

“…This level of powder recovery during high‐temperature spray‐drying of honey or fruit concentrate/juice has not been presented before. A recent study showed that Nutriose provided high product yield (>60%) in spray‐drying of concentrated pomegranate juice . During spray‐drying of mountain tea, the highest product yield was obtained with maltodextrin (DE 12), followed by gum arabic, maltodextrin (DE 19), and β ‐cyclodextrin .…”

“…Prebiotics may also be applied in the production of functional food [31] based on spray dried fruit juices and honey. Application of prebiotics as a drying carriers gives following advantages: high product yield, [26] a better retention of the total phenolic compounds [32] and anthocyanin [33] in comparison to conventional maltodextrin applied as a carrier, enhanced wettability [34] and solubility [26] of dry powder.…”
