Specific aminopeptidases of indigenous Lactobacillus brevis and Lactobacillus plantarum

Abstract: Lactic acid bacteria play an important role in milk coagulation and cheese ripening. To select strains showing interesting industrial features, two indigenous lactobacilli (Lactobacillus brevis and Lactobacillus plantarum) were studied for aminopeptidase activity.
