This study aims to analyse the role and contribution of small farms and small food businesses on the food system and food security. Drawing on a conceptual framework, methodology, and data from the EU H2020 ‘SALSA-Small farms, small food businesses and sustainable food and nutrition security’ project hereafter referred as SALSA project, this issue has been analysed in relation to four staple products (tomato, chicken, maize, and banana) in Santiago Island (Cabo Verde). The study follows a regional approach based on a detailed analysis of the territorial food systems and of the production/consumption balance of those staple products. The results show that the subsystems of production, processing, distribution, and consumption are different in the different food systems map for the four staple products, with complex and diversified interrelationships between small farms and related small businesses linking with various markets and all kinds of actors. Moreover, the evidence shows that small farms, in conjunction with small food businesses, are crucial to national food security in Santiago Island. The small farm is fundamental for greater food availability produced in the region, and the small food business is a key component playing a very important role by ensuring the stability of supply, being primarily responsible for establishing relationships to population centres.

Los regadíos históricos han sido una invariante en los paisajes de una montaña mediterránea semiárida como la Sierra de la Contraviesa (sureste de España). Estos espacios regados han contribuido, pese a su exigua extensión, a diversificar el mosaico agrario serrano y la economía local, presentando unas constantes paisajísticas relativamente estables durante siglos. Pese a todo, desde 1950, la marginalidad socioeconómica de este ámbito dentro de la actual dinámica territorial de la región, ha desencadenado profundos cambios. Este trabajo tiene por objeto interpretar en clave paisajística la evolución histórica y multiplicidad de funciones de estos sistemas y su papel actual en el mosaico de los agrosistemas presentes en el macizo. Para ello, se profundiza, en primer lugar, en las bases físicas que sustentan el regadío y en el proceso de conformación histórico-geográfica (ss. IV-XX) de estas estructuras heredadas. En segundo lugar, y partiendo de la cartografía histórica catastral, se realiza un análisis diacrónico de su extensión y configuración en los principales perímetros de regadío para los últimos 70 años. Los resultados obtenidos revelan cómo la reciente desarticulación del modelo de gestión tradicional compromete la continuidad de estos sistemas y de sus diversos valores asociados, determinando un progresivo empobrecimiento y homogenización paisajística.

The present paper highlights the importance of hedgerows and enclosures in the mountains of Central Spain. Now, these landscapes have suffered profound variations in terms of agroforestry practices, especially in the Mediterranean mountains where the characteristic multifunctional has largely been lost. The article analyzes land uses changes, dynamics, and their morphological features between the first half of the 20th Century (1956) and the second decade of the present time (2019). The paper was divided into three sections. First, the identification of land uses using orthophotograph and aerial photograph; after that the info was checked with fieldwork. Eleven categories were identified according to the dominant use and land use changes and size of land parcels were taken into consideration. Second, the configuration and the information collected through the type and intensity of change in land uses made it possible to recognise and quantify their distribution and trend between these two dates. Also, the kernel density algorithm available in the Arcgis 10.5 software was used to obtain density and changes in land parcels. Finally, an overview is given of the main role that this agroforestry plays due to the social, ecological, and economic benefits that they provide for allowing sustainable development.
