“…The amplitudes of the velocity‐encoding gradients were, respectively, in the 500‐μm‐gap and 4‐mm‐gap CC, set to (i) 1.50, 1.19, and 0.14 T m −1 for recording shear rates of trueγ̇=0.5,1,and0.25em80.25ems1 or to (ii) 0.51 and 0.05 T m −1 for recording shear rates of trueγ̇=0.50.25emand0.25em80.25ems1. To avoid chemical shift artifacts, a chemical shift selective (CHESS) suppression module, as implemented by Serial et al, [ 26 ] was used in all measurements using three 90° chemically selective pulses with bandwidth of 0.8 kHz. The offset was set to 1 or 0.1 kHz, respectively, for measurements at shear rates of trueγ̇=0.50.25emand0.25em80.25ems1 at room temperature or at shear rate of trueγ̇=10.25ems1 under variable temperature conditions.…”

“…22 1D velocity profiles were measured using a Pulsed Gradient Spin Echo (PGSE) 25 sequence, within a slice 1 mm thick along two dimensions, echo time T E = 20 ms and repetition time T R = 2 s. The duration of the velocity-encoding gradient pulses, and their inter-pulse spacing, were δ = 1 ms and ∆ = 13 ms, respectively. To avoid chemical-shift artefacts, a CHEmical Shift Selective (CHESS) suppression module, as implemented by Serial et al, 26 was used in all measurements using three 90 o chemically selective pulses with bandwidth of 0.8 kHz and offset of 1.1 kHz. The frequency-encoding read gradient provided a 10 mm-long slice over 1024 pixels, such that the spatial resolution was = ∆𝑥 10 μm.…”

“…To go deeper into the analysis of the time-dependent behavior of EY and MEY emulsions, conventional rheology measurements are combined with localized 1D flow profiles recorded using rheo-MRI. This technique has been extensively applied in the study of structure formation and degradation of complex systems, as well as in the investigation of transient flow in Newtonian and non-Newtonian fluids [ 16 , 23 , 24 , 25 ]. By combining rheology stress ( ) measurements with shear rate (r) profiles calculated from rheo-MRI velocity data, with being the position along the cell gap, a local flow curve (LFC) can be constructed as a function of time during shear treatment.…”

“…Rheological measurements were conducted on a conventional Modular Compact Rheometer 301 (MCR301, Anton Paar, Graz, Austria). For all experiments, a home built 1 mm gap Couette cell (CC) with the exact same dimensions as the cell used for rheo-MRI experiments was employed [ 16 , 25 ]. Time-dependent measurements of native EY and MEY emulsions were investigated for a total period of 500 min at 20 °C, in synchronization with rheo-MRI experiments.…”
