ABSTRACT:The fatty acid (FA) composition of bulk milk fat was examined on three mountain dairy farms in the Czech Republic. Milk samples were collected in the period of indoor grass silage feeding (November-April) and in the grazing period (May-October). In total fifty FAs were identified in the milk fat. The two-way ANOVA with factors of the farm and of the period of milk sample collection was used for the evaluation of variation in FA concentrations. Significant differences between the farms (P < 0.01) were found in the concentration of five FAs, which accounted for 30.40 g/100 g total FAs. Significant differences between the indoor and the grazing period (P < 0.01) were found in the concentration of sixteen FAs, which accounted for 63.86 g/100 g total FAs. The content of long-chain (> C16), mono-and polyunsaturated FAs in the milk fat was higher in the grazing period (49.22, 31.69 and 4.69 g/100 g total FAs) than in the indoor period (42.25, 27.55 and 4.15 g/100 g total FAs, respectively; P < 0.01). The proportion of conjugated linoleic acid (CLA) was also higher in the grazing period (1.09 g/100 g total FAs) than in the indoor period (0.74 g/100 g total FAs; P < 0.01). The medium-chain (C12-C16) and the saturated FAs were more abundant in the milk fat in the indoor period (48.91 and 67.16 g/100 g total FAs) than in the grazing period (41.31 and 62.16 g/100 g total FAs; P < 0.001 and P < 0.01; respectively). These results indicated a positive influence of seasonal grazing on the FA profile of cow milk fat as regards its potential health effects in consumers.

S t r e s z c z e n i eBadaniami objęto 68 gospodarstw zlokalizowanych w 3 rejonach wschodniej Polski, tzn. na nizinach (tereny nadbużańskie i biebrzańsko-narwiańskie), w Beskidzie Niskim i Bieszczadach, wyróżniając gospodarstwa produkujące mleko w systemie intensywnym i tradycyjnym. W 1589 próbach mleka oznaczono: zawartość tłuszczu, białka, kazeiny, laktozy i suchej masy, kwasowość (pH), stabilność cieplną, czas krzepnięcia mleka pod wpływem podpuszczki, zawartość α-laktoalbuminy, β-laktoglobuliny, albuminy serum, laktoferyny i lizozymu. W wybranych 298 próbkach oznaczono także profil kwasów tłuszczowych. Wykazano istotny (p ≤ 0,01 i p ≤ 0,05) wpływ systemu produkcji mleka (intensywny vs tradycyjny) na podstawowy skład chemiczny, zawartość białek serwatkowych, profil kwasów tłuszczowych, kwasowość, czas krzepnięcia i stabilność cieplną. Mniej wyraźny, chociaż w wielu przypadkach także statystycznie istotny był wpływ rejonu produkcji mleka. Najwięcej składników podstawowych i niektórych frakcji białek serwatkowych zawierało mleko pozyskiwane w rejonie Beskidu Niskiego. Może to wynikać z dominującej w tym rejonie rasą krów (polska czerwona) i większą różnorodnością składu botanicznego zielonki łąkowej i pastwiskowej. Stwierdzono istotne (p ≤ 0,001) interakcje tych dwóch analizowanych czynników, tzn. systemu i rejonu produkcji prawie w przypadku wszystkich ocenianych podstawowych składników mleka i frakcji białek serwatkowych.Słowa kluczowe: mleko, wartość odżywcza, przydatność technologiczna, lokalne rasy bydła, system produkcji Wprowadzenie Zróżnicowane warunki przyrodnicze w Polsce mają decydujący wpływ na stopień intensyfikacji produkcji rolniczej. ABSTRACT:The aim of this study was to determine the impact of the length of calf sucking milk from its own mother on calf growth at the age of 3 months and milk yield of mothers. We tested a hypothesis that the nursing of calves by their own mothers increases the body weight of calves and decreases the milk production. 50 Holstein primiparous cows and their calves were divided into three groups according to the sucking length of calves: 7 days (A), 14 days (B) and 21 days (C). All calves suckled mother's colostrum and milk while mothers were milked twice per day. After weaning from mother calves were kept in individual hutches until 56 days of life, and then in group housing pens. In the period from birth to weaning the calves of group A reached the lowest and the calves of group C the highest daily gains (0.35 kg, 0.46 kg, 0.54 kg; P < 0.01). The lowest gain was recorded in animals of group A (0.55 kg) and the highest gain was reached by calves of group C (0.74 kg) for the period from birth to three months of age. For the first 305 days of lactation cows of group A produced insignificantly more milk than group C (7356.5 kg, 6779.2 kg, 6663.9 kg). A significant difference in milk production was recorded only during the first seven months of lactation (5494.5 kg, 5041.9 kg, and 4872.3 kg; P < 0.05). The long stay of calves with their mothers influences the growth of calves positively, but the milk production of mothers may decrease. Therefore, the stay of calves with the dam within 21 days after birth is not recommended for high-yielding dairy cows.
