“…There is a lack of information on the natural microflora of bamboo shoots from Taiwan; however, in the literature we found some reports on the lactic microflora of bamboo shoots fermented in India and Thailand. For example, lactic acid bacteria (LAB) are distributed in Indian fermented bamboo shoot products ( mesu )1, 2 and Thai fermented bamboo shoot products ( naw‐mai‐dong ) 3–5. In these cited studies, various lactobacilli species, such as Lactobacillus plantarum , L. pentosus, L. brevis and L. fermentum , were frequently found in fermented bamboo shoot products.…”
