Cet article propose une première synthèse sur les fours à pain dans le territoire correspondant aux provinces gauloises et germaniques, du ve s. av. J.-C. au ve s. apr. J.-C., en s’appuyant sur un corpus de 717 exemples. Dans cette étude, effectuée en suivant une approche d’histoire des techniques, les principaux processus de cuisson mis en œuvre durant l’Antiquité sont décrits. En se fondant pour partie sur les expériences menées à Saint-Romain-en-Gal (Rhône) suite à la reconstitution d’un four à coupole du ier s. apr. J.-C., la cuisson du pain est détaillée et les variations observées dans les modes de construction des dispositifs de ce type sont exposées. De la même manière, les fours à sole verticale, qui permettent de faire cuire des galettes, sont décrits. Enfin, une évolution de l’usage des fours à pain est esquissée sur le temps long, qui voit l’usage de la coupole progressivement dominer les modes de cuisson du pain.
