Zinc (Zn) is considered in animal production systems as both an essential nutrient and a possible pollutant. While it is generally supplemented at low levels in animal diets, with less than 200 mg kg(-1) in complete feeds, it is under scrutiny due to potential accumulation in the environment. This explains why international regulations limit maximum supplementation levels in animal feeds in a stricter way. This article gives an overview of the current knowledge on the fate of zinc in animal production systems, from animal diets to animal wastes. Some analytical methods can be used for the quantification and qualification of Zn chemical forms: X-ray crystallography, electrospray tandem mass spectrometry, separation techniques, hyphenated techniques… Analysis of chelated forms issued from complex matrices, like hydrolysed proteins, remains difficult, and the speciation of Zn in diluted carriers (premix and feed) is a challenge. Our understanding of Zn absorption has made progress with recent research on ZnT/Zip families and metallothioneins. However, fine-tuned approaches towards the nutritional and metabolic interactions for Zn supplementation in farm conditions still require further studies. The speciation of zinc in pig manure and poultry litter has been a priority as monogastric animals are usually raised under intensive conditions and fed with high quantities of trace minerals, leading to high animal density and elevated quantities of zinc from animal wastes.

Spreading livestock manure as fertilizer on farmlands is a widespread practice. It represents the major source of heavy metal(loid)s (HM) input in agricultural soils. Since zinc (Zn) is present at high concentrations in manure, it poses special environmental concerns related to phytotoxicity, groundwater contamination, and introduction in the food chain. Therefore, investigations on the fate and behavior of manure-borne Zn, when it enters the soil environment, are necessary to predict the environmental effects. Nevertheless, long-term field studies assessing Zn speciation in the organic waste matrix, as well as within the soil after manure application, are lacking. This study was designed to fill this gap. Using SEM-EDS and XAS analysis, we reported the following new results: (i) ZnS made up 100% of the Zn speciation in the pig slurry (the highest proportion of ZnS ever observed in organic waste); and (ii) ZnS aggregates were about 1-μm diameter (the smallest particle size ever reported in pig slurry). Moreover, the pig slurry containing ZnS was spread on the soil over an 11-year period, totaling 22 applications, and the resulting Zn speciation within the amended soil was analyzed. Surprisingly, ZnS, i.e. the only species responsible for a nearly 2-fold increase in the Zn concentration within the amended soil, was not detected in this soil. Based on SEM-EDS and XAS observations, we put forward the hypothesis that Zn in the pig slurry consisted of nano-sized ZnS crystallites that further aggregated. The low stability of ZnS nanoparticles within oxic and complex environments such as the studied soil was the key explanation for the radical change in pig slurry-borne Zn speciation after long-term amendments.

Hydrothermal carbonization of animal manure is being increasingly recognized as a green process for hydrochar production. Temperature obviously affects the properties of hydrochar especially with respect to carbon retention and stability. These properties determine the carbon sequestration potential of hydrochar but related researches are limited. In this study, chicken, dairy, and swine manures were collected and hydrothermal carbonized under different temperature conditions, aiming to study the fuel characteristics, carbon retention, and stability of hydrochar influenced by temperature. Results show that high temperature led to low yield and declined H/C, O/C, and volatile matter of hydrochar. While high temperature caused high fixed carbon, fuel ratio, and heating value of hydrochar, indicating that animal manure hydrochar can be adopted as an alternative of fuel. After hydrothermal carbonization, less than half of carbon from animal manure was retained in hydrochar: 22.70%-46.71% for chicken manure, 39.36%-49.72% for dairy manure, and 36.24%-64.21% for swine manure. The carbon retention decreased with the increase of temperature. Conversely, high temperature improved the aromatic and strengthened the resistance to thermal oxidation of hydrochar, which was evidenced by FTIR and TGA analysis. Moreover, the carbon sequestration capacity of animal manure hydrochar was less than a third of total carbon (originated from animal manure) and relatively low temperature (no more than 250°C) was beneficial to produce hydrochar for carbon sequestration.
