“…The DH value measured after gastrointestinal digestion with our model was lower than that determined by Picariello et al (2015) which found a degree of hydrolysis for skimmed milk between 34.5 and 58 depending on the substrate to digestive enzyme ratio. Simulated digestion of isolated κ-and β-casein resulted in a hydrolysis degree 3.2 ABTS + radical scavenging activity of digested whole, semi-skimmed and skimmed milk All three types of milk showed ABTS + radical scavenging activity before the digestion (Table 2), but with some differences.…”

“…The α s1 -casein (f180-197) was found in an independent sample and it probably survived digestion, because it belongs to a relatively proteolysis-resistant region of the protein. 35 No additional casein peptides were detected, most likely due to their prompt and extensive degradation by the gastro-intestinal system of the mother. The MS/MS spectrum of β-Lg (f42-57) is shown in Figure 1 with the assignment of the most intense fragments, also manually validated.…”

“…Some precursors included in the β-casein 57-68 region were found when cheese or milk were digested with pepsin and pancreatin (Hernandez-Ledesma, Quiros et al 2007; Sanchez-Rivera, Diezhandino et al 2014) or with human gastrointestinal secretions (Qureshi, Vegarud et al 2013). Interestingly, an additional hydrolysis step with brush border peptidases released β-casomorphin-7 (Picariello et al, 2015).…”
