If 60 % of milk phospholipids are assumed to contain choline, and phospholipids are 0·5-1 % of total milk lipids (Bitman & Wood, 1990;McPherson & Kitchen, 1983), then the concentration of choline-containing phospholipids is in the range 105-210 mg/l, in addition to the free choline (Kaufmann & Hagemeister, 1987;Rohlfs et al 1993). However this figure is likely to vary greatly with breed, fat content, fat globule size and lactation stage, and also with the methods and assumptions used in the estimation.…”
