Review: The variability of the eating quality of beef can be reduced by predicting consumer satisfaction

Abstract: The Meat Standards Australia (MSA) grading scheme has the ability to predict beef eating quality for each 'cut×cooking method combination' from animal and carcass traits such as sex, age, breed, marbling, hot carcass weight and fatness, ageing time, etc. Following MSA testing protocols, a total of 22 different muscles, cooked by four different cooking methods and to three different degrees of doneness, were tasted by over 19 000 consumers from Northern Ireland, Poland, Ireland, France and Australia. Consumers … Show more

“…The global beef industry has yet to agree on one method for ensuring that eating quality meets consumer expectations. The meat industry and researchers have investigated a range of methods for predicting and managing eating quality and these have been reviewed recently [ 50 , 59 ]. A wide range of new technologies have been evaluated for the prediction of eating quality [ 60 ] but none have yet achieved this consistently and grading methods still deliver the most reliable prediction.…”

“…The MSA model has been tested successfully in different countries (reviewed by Bonny et al, (2018) [35]) including France [36][37][38], South Korea [39], Northern Ireland [40][41][42][43], the USA [44,45], Japan [46], Ireland [47], South Africa [48], New Zealand [49], and Poland [50,51]. The general conclusion is that the MSA methodology is relevant in all these countries, indicating that the MSA model is likely to be generally applicable.…”

“…Further developing the current star system, that is, to move towards a system comparable to the MSA model would make it possible to identify the best combinations, that is, between the animal, muscle, duration of maturation, and cooking method. Such an approach has been successfully studied in Europe (Bonny et al 2018).…”
