“…In addition to thick juice storage, Fiddlers (1) discussed storage of raw thick juice in 1993 and Groom presented a paper on extract storage at the 2003 ASSBT (2). In all cases, the conditions for successful storage of concentrated juice are similar: RDS of 67% or higher or super saturation of 1.05, pH of approximately 9 or greater, temperature of storage 25 ºC or lower, and control of infections at the surface of the juice through the application of 25% sodium hydroxide or other approved chemicals that have shown efficacy in this application.…”
